It got hot this week in Virginia, like “oh my god it’s so hot I can’t function” hot. And it happened overnight too. So we broke out the pool, turned on the AC and made popsicles! Making your own popsicles at home is so incredibly fast and easy. Not only are they way cheaper than the ones you buy in the store, but they also have no added sugar or any other gross things like food coloring and chemicals. 
Our favorite popsicles are super simple, throw some fruit in the blender, add a little coconut milk to make it creamy and then freeze. You don’t even need fancy popsicle holders, you can always make them in ice cube trays and put popsicle sticks in them. I’ve put a few recipes below but get creative! I also like to throw a few handfuls of greens like baby spinach in sometimes, the green color really appeals to kids and it makes it easy to get a serving of veggies into them. 
Fresh Fruit Popsicles
- 1 mango peeled and cut into chunks
- 1 banana
- 1/3 cup strawberries
- 2 peaches sliced
- Dash of coconut milk
- 1 handful spinach leaves
- 1/2 pineapple cut into chunks
- 1 mango
- Handful of mint leaves
- 2 cups strawberries
- 1/2 cup non dairy milk
- 1 cup raspberries
- 1 cup blueberries
- 1 cup blackberries
- 1/2 cup unsweetened fruit tea
Put all of your ingredients in a blender, puree until very smooth, adding milk, water, or tea to get the consistency you desire.
Pour into your containers adding sticks if needed.
Leave a little room for the popsicles to expand. Freeze for at least 3 hours and then enjoy!
I do this with the kids I watch all the time! We always have some in the freezer. We really like doing peaches, yogurt, cinnamon and a touch of honey.
Also, I make layered ones (which takes more time, because you have to wait for one layer to freeze). And if there’s extra fruit puree, we freeze it separately in little plastic cups and use if for easy smoothies.
